Ultimate Snack Mix

When thinking of "u" food words, I just kept coming up with the words "unsweetened coconut." In admission of not having any real "u" words to write about today, I am flaking out and giving you some simple directions for my Ultimate Snack Mix. Although I really want to call this trail mix, there isn't any fruit (or granola or oats) hiding inside; therefore, it isn't technically trail mix. The total and/or net carbs in this mix will depend upon how many nuts you throw into it. Unsweetened coconut has right under 2 net carbs per 1/4 cup serving.

Mix together:
plain sliced almonds
whole macadamia nuts
sunflower seed kernels
unsweetened coconut flakes
Nevada Manna sugar-free semi-sweet mini chocolate chips

Although I enjoy dried fruit, I cannot tolerate the sugar content of most.

Do you have an altered version of a snack mix or trail mix that contains unsweetened or low/no sugar ingredients?

  1. I've never had unsweetened mini chocolate chips. I can't imagine them in a nut mix without some other form of sweetener.

  3. Oops! I made a mistake and Marie Anne's comment helped me realize it. I posted "unsweetened" when I should have listed the Nevada Manna as "sugar-free." There is a difference. ;)

  4. My father once took me out for the day to the mall to get some gifts for my mother, and before we left he treated me to a large orange juice and a wonderful confection he called a macaroon.

    Apparently he was unaware that I couldn't stand coconut. I threw up in the janitor's trash bin on his way by.

  5. Wow, Matt. So sorry. I guess the coconut brought up some bad memories for you. ;) I once threw up orange juice and pretzels after a carnival ride on some swings. Interestingly enough, it was what my dad had given me for dinner (along with a grilled cheese sandwich.) What's with dads and orange juice anyway?

  7. I like snack mixes, especially ones without peanuts. I like peanut butter, but other than that, peanuts kind of give me the creeps.

  8. Mmm, this sounds good. I am a sucker for a good snack mix or trail mix. We always took GORP on our hikes but there's nothing unsweetened about that.
