I is for Italian Beef today. I'm sharing a recipe that my husband tweaked to his liking. We had Italian beef for dinner last night and there is enough for leftovers today, too. I do eat low-carb ice cream and drink iced tea while following my weight loss plan, but Italian beef (minus the bun for me) is something I can still enjoy a few times per month without it affecting my weight loss efforts.
Slow Cooker Italian Beef
5 lbs. bottom round steaks
3 c water
1 t salt
1 t pepper
1 1/2 t of Italian Seasoning (we use Tone's brand purchased from Sam's Club)
1/4 t onion powder
1 t garlic powder
1 .7 oz pkg dry italian seasoning mix (optional)
1/4 jar pepperoncini peppers w/juice
Mix spices and seasonings with water and add to crock pot or slow cooker. Add round steaks. Add pepperoncinis with juice. Cover and cook on low for 10-12 hours or on high for 4-5 hours. Take meat out of slow cooker, shred and put back into crock pot and mix.
Serve Italian beef with mozzarella cheese if you'd like. I enjoy mine plain with a salad on the side.
